Method
- Combine the diced apples, sugar, cinnamon, and lemon juice in a saucepan.
- Cook over medium heat for about 10 to 15 minutes, stirring occasionally, until the apples are tender but still hold their shape. Remove from heat and let cool completely.
- In a large bowl, whisk together the heavy cream, sweetened condensed milk, and vanilla extract until the mixture thickens slightly.
- If using an ice cream maker, churn the base according to the manufacturer's directions. When the ice cream reaches a soft-serve consistency, gently fold in the cooled apple mixture.
- If making no-churn ice cream, fold the cooled apple mixture into the cream base. Transfer the mixture to a freezer-safe container.
- Freeze for at least 3 hours, or until firm. Allow the ice cream to sit at room temperature for a few minutes before scooping.
