Chicken Avocado Melt Sandwich

This recipe describes how to prepare a simple sandwich featuring cooked chicken, avocado, and melted cheese.

Ingredients
  

For the Sandwich
  • 4 slices Bread Sourdough or whole wheat recommended
  • 1 cup Cooked chicken Shredded or diced
  • 1 whole Avocado Mashed
  • 4 slices Cheese Cheddar, Monterey Jack, or preferred melting cheese
  • 2 tsp Mayonnaise Optional, for mixing with chicken
  • 1 tsp Lemon juice Optional, for avocado
For Grilling
  • 2 tbsp Butter Softened

Equipment

  • Skillet or Griddle
  • Spatula

Method
 

  1. Lightly mix the cooked chicken with mayonnaise, if using. If using lemon juice, mix it into the mashed avocado.
  2. Spread softened butter on one side of each slice of bread.
  3. Assemble the sandwiches: Place two slices of bread, butter-side down, in a skillet set over medium heat.
  4. Top the bread in the skillet with cheese, then the chicken mixture, followed by the mashed avocado, and finish with one slice of cheese per sandwich.
  5. Place the remaining two slices of bread on top, butter-side up.
  6. Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is fully melted.
  7. Remove from the skillet, slice in half, and serve immediately.

Notes

For extra flavor, you can add a pinch of salt and pepper to the chicken or avocado mixture before assembly.
