Method
- Lightly mix the cooked chicken with mayonnaise, if using. If using lemon juice, mix it into the mashed avocado.
- Spread softened butter on one side of each slice of bread.
- Assemble the sandwiches: Place two slices of bread, butter-side down, in a skillet set over medium heat.
- Top the bread in the skillet with cheese, then the chicken mixture, followed by the mashed avocado, and finish with one slice of cheese per sandwich.
- Place the remaining two slices of bread on top, butter-side up.
- Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is fully melted.
- Remove from the skillet, slice in half, and serve immediately.
Notes
For extra flavor, you can add a pinch of salt and pepper to the chicken or avocado mixture before assembly.
