Chicken Skewers with Honey Garlic Sauce

Method
 

  1. Place the cubed chicken in a medium bowl.
  2. To make the sauce, whisk together the honey, soy sauce, minced garlic, rice vinegar, and ground ginger in a small saucepan. Heat over medium heat until it simmers. Remove from heat and stir in the vegetable oil. Let it cool slightly.
  3. Pour half of the honey garlic sauce over the chicken cubes. Toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes.
  4. Thread the marinated chicken onto skewers. Discard the remaining marinade used for the chicken.
  5. Preheat your grill or broiler to medium-high heat.
  6. Grill or broil the skewers for 4 to 6 minutes per side, brushing frequently with the reserved, unused portion of the honey garlic sauce during the last few minutes of cooking, until the chicken is cooked through and lightly caramelized.
  7. Serve the chicken skewers immediately.

Notes

If you do not have skewers, you can cook the chicken pieces in a skillet until done, tossing them with the reserved sauce near the end.
