Cinnamon Sugar Biscuit Bites

This recipe makes small, sweet biscuit bites coated in cinnamon sugar. They are quick to prepare and bake.

Ingredients
  

For the Biscuits
  • 2 cups all-purpose flour plus more for dusting
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 cup cold unsalted butter cut into small pieces
  • 3/4 cup cold milk
For the Coating
  • 1/2 cup granulated sugar
  • 2 tbsp ground cinnamon
  • 4 tbsp unsalted butter melted

Equipment

  • Mixing bowls
  • Small round cookie cutter (about 1.5 inches)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut the cold butter pieces into the flour mixture using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Pour in the cold milk and stir just until a shaggy dough forms. Do not overmix.
  5. Turn the dough out onto a lightly floured surface. Gently pat or roll the dough to about 1/2 inch thickness.
  6. Use a small round cookie cutter to cut out small circles. You should get about 18 bites. Place the dough circles on the prepared baking sheet.
  7. In a small bowl, mix the granulated sugar and cinnamon for the coating.
  8. Brush the tops of the biscuit bites with melted butter, then dip them into the cinnamon sugar mixture, coating both sides if desired.
  9. Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
  10. Remove from the oven and let cool slightly before serving.

Notes

If you do not have a small cookie cutter, you can cut the dough into small squares. For extra flavor, you can brush the tops with melted butter a second time after they come out of the oven and roll them again in the cinnamon sugar.
