- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a baking dish.
- Use a spoon to scoop out the soft center flesh from the zucchini halves, leaving about a 1/4-inch thick shell. Chop the removed zucchini flesh and set aside.
- Heat the olive oil in a skillet over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
- Add the chopped onion, minced garlic, Italian seasoning, salt, and pepper to the skillet. Cook until the onion softens, about 5 minutes.
- Stir in the reserved chopped zucchini flesh and the tomato sauce. Cook for 5 more minutes, stirring occasionally.
- Place the hollowed zucchini shells in the prepared baking dish. Spoon the meat mixture evenly into the zucchini shells.
- Cover the baking dish with foil and bake for 20 minutes. Remove the foil, sprinkle the tops with mozzarella cheese, and bake uncovered for an additional 10 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

You can substitute ground turkey or ground chicken for the beef if you prefer a different meat base. For extra flavor, add 1/4 cup of grated Parmesan cheese to the filling mix.
