Hawaiian Chicken Sheet Pan

This recipe produces a quick and simple Hawaiian-style chicken dinner cooked entirely on one sheet pan.

Ingredients
  

For the Chicken and Vegetables
  • 1.5 lbs Boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup Fresh pineapple chunks Drained if canned
  • 1 large Red bell pepper, cut into 1-inch pieces
  • 1 cup Red onion, cut into wedges
For the Sauce
  • 1/2 cup Barbecue sauce Use your favorite brand
  • 1/4 cup Soy sauce
  • 2 tbsp Brown sugar
  • 1 tsp Ground ginger
  • 2 cloves Garlic, minced

Equipment

  • Large baking sheet
  • Small bowl

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the barbecue sauce, soy sauce, brown sugar, ground ginger, and minced garlic to make the sauce.
  3. Place the chicken pieces, pineapple chunks, red bell pepper, and red onion onto the prepared baking sheet.
  4. Pour the prepared sauce over the chicken and vegetables. Toss everything directly on the sheet pan until all pieces are evenly coated.
  5. Spread the mixture into a single layer on the baking sheet. Bake for 20 to 25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius).
  6. Serve immediately over rice or noodles if desired.

Notes

You can substitute chicken breasts for thighs, but adjust the cooking time slightly as they may dry out faster.
