- Cook the rice according to package directions in a medium saucepan. Keep warm until serving.
- In a small bowl, whisk together the BBQ sauce, honey, soy sauce, and minced garlic to make the sauce mixture.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken pieces to the hot skillet. Cook until the chicken is browned on all sides and cooked through, about 6 to 8 minutes.
- Pour the prepared sauce mixture over the cooked chicken in the skillet. Stir to coat the chicken evenly.
- Reduce the heat to low and let the mixture simmer for 2 to 3 minutes, allowing the sauce to thicken slightly.
- Serve the honey BBQ chicken immediately over the cooked rice.
Notes
You can add a sprinkle of sesame seeds or chopped green onions on top before serving for extra flavor and color.
