Honey BBQ Chicken Rice

This recipe provides instructions for making a simple meal of chicken coated in a honey barbecue sauce served over rice.

Ingredients
  

For the Chicken and Sauce
  • 1.5 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tsp olive oil
  • 1/2 cup BBQ sauce your favorite brand
  • 1/4 cup honey
  • 1 tbsp soy sauce
  • 1 clove garlic minced
For Serving
  • 2 cups uncooked white rice

Equipment

  • Large skillet
  • medium saucepan

Method
 

  1. Cook the rice according to package directions in a medium saucepan. Keep warm until serving.
  2. In a small bowl, whisk together the BBQ sauce, honey, soy sauce, and minced garlic to make the sauce mixture.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Add the chicken pieces to the hot skillet. Cook until the chicken is browned on all sides and cooked through, about 6 to 8 minutes.
  5. Pour the prepared sauce mixture over the cooked chicken in the skillet. Stir to coat the chicken evenly.
  6. Reduce the heat to low and let the mixture simmer for 2 to 3 minutes, allowing the sauce to thicken slightly.
  7. Serve the honey BBQ chicken immediately over the cooked rice.

Notes

You can add a sprinkle of sesame seeds or chopped green onions on top before serving for extra flavor and color.
