- Preheat your oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Prepare the crust: In a food processor, pulse the flour and sugar until combined. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes, or until the edges are lightly golden.
- Prepare the filling: While the crust bakes, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest in a medium bowl until smooth.
- Pour the filling evenly over the hot, pre-baked crust.
- Return the pan to the oven and bake for an additional 15 minutes, or until the filling is set but still slightly jiggly in the center.
- Let the bars cool completely at room temperature, then chill in the refrigerator for at least 2 hours before slicing into 12 bars.
