Prepare the Dough
- Preheat the oven to 375°F (190°C). Lightly flour a work surface and roll out the pizza dough until about ¼-inch thick. Cut the dough into 8 equal squares or circles.
Add Sauce and Fillings
- Place a small spoonful of pizza sauce in the center of each dough piece. Add shredded mozzarella, pepperoni, and a sprinkle of Italian seasoning.
Fold and Seal
- Fold the dough over the filling to form a pocket. Press the edges firmly together and seal them with a fork.
Prepare for Baking
- Place the pockets on a parchment-lined baking sheet. Brush the tops with olive oil and sprinkle with parmesan and garlic powder if desired.
Bake
- Bake for 12–15 minutes, or until the pizza pockets are golden brown and crispy.
Cool and Serve
- Let the pizza pockets cool for 5 minutes before serving. Serve with marinara sauce, ranch dressing, or garlic butter for dipping.

Notes
- Do not overfill the pockets, or they may burst while baking.
- For crispier pizza pockets, brush the tops with garlic butter before baking.
- These pizza pockets can also be cooked in an air fryer at 375°F for 8–10 minutes.
- Great for meal prep—make a batch and freeze extras for quick snacks later.
