Salmon with Mango Salsa

Ingredients
  

For the Salmon
  • 4 fillets Salmon about 6 ounces each
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Mango Salsa
  • 1 large Mango diced
  • 1/2 cup Red onion finely chopped
  • 1 jalapeno Jalapeno seeds removed, minced
  • 1/4 cup Cilantro chopped
  • 1 tbsp Lime juice freshly squeezed

  • Baking sheet
  • Small bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  2. Place the salmon fillets on the prepared baking sheet.
  3. Brush the tops of the salmon with olive oil. Sprinkle evenly with salt and pepper.
  4. Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. While the salmon bakes, prepare the salsa. In a small bowl, combine the diced mango, red onion, minced jalapeno, cilantro, and lime juice.
  6. Gently stir the salsa ingredients to mix them well.
  7. Remove the salmon from the oven. Top each fillet with a generous spoonful of the mango salsa before serving.

Notes
