- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced sausage to the skillet. Cook for 3 to 5 minutes until the edges start to brown. Remove the sausage from the skillet and set it aside.
- Add the chopped onion to the same skillet. Cook for 2 minutes until softened.
- Add the broccoli florets, bell pepper, and mushrooms to the skillet. Cook, stirring occasionally, for 5 to 7 minutes until the vegetables are tender-crisp.
- Stir in the garlic powder and black pepper. Cook for 1 minute more.
- Return the cooked sausage to the skillet with the vegetables. Stir to combine and heat through, about 1 to 2 minutes. Season with salt if needed.
- Serve the sausage and veggies skillet immediately.
Notes
You can substitute other firm vegetables like zucchini or carrots. If you use raw sausage instead of smoked sausage, cook it fully before adding the vegetables back to the pan.
