Ingredients

For the Peach Syrup
  • 1 cup water
  • 1 cup sugar
  • 2 cups fresh or frozen peach slices Pitted
For the Lemonade
  • 1 cup fresh lemon juice About 6-8 lemons
  • 4 cups cold water More if needed for thinning
  • 1 cup peach syrup Cooled
  • 1 cup ice For serving

Equipment

  • Blender
  • saucepan
  • Pitcher

Method

  1. Make the peach syrup. Combine 1 cup of water, 1 cup of sugar, and the peach slices in a small saucepan.
  2. Heat the mixture over medium heat, stirring until the sugar dissolves completely. Bring it to a gentle simmer and cook for about 5 minutes until the peaches soften slightly.
  3. Remove the saucepan from the heat. Pour the peach mixture into a blender. Blend until smooth.
  4. Strain the peach puree through a fine-mesh sieve into a bowl to remove solids. Press down on the solids to extract all liquid. You should have about 1 cup of syrup. Let the syrup cool completely.
  5. In a large pitcher, combine the cooled peach syrup, 1 cup of fresh lemon juice, and 4 cups of cold water. Stir well to combine.
  6. Taste the lemonade. Add more water if the flavor is too strong, or a little more sugar dissolved in warm water if you prefer it sweeter.
  7. Chill the lemonade in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  8. Serve the peach lemonade over ice.

If you want a stronger peach flavor, use slightly more than 1 cup of the cooled syrup. Garnish glasses with thin slices of fresh peach or lemon wedges before serving.
