- In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, ginger, and water until smooth. Set aside.
- Heat a skillet over medium-high heat. Add the chicken pieces and cook them until they are browned and cooked through, about 6 to 8 minutes.
- Pour the peanut sauce over the cooked chicken in the skillet. Stir to coat the chicken completely. Cook for 1 to 2 minutes until the sauce thickens slightly. Remove from heat.
- Warm the tortillas according to package directions, if desired.
- To assemble the wraps, lay out a tortilla. Place a portion of the sauced chicken mixture down the center. Top with shredded carrots, red cabbage, and cilantro.
- Fold in the sides of the tortilla, then roll it up tightly. Sprinkle the tops with chopped peanuts before serving.
